THIS WEEK'S RECIPE:

SPICY SAUSAGE WITH LENTILS
SERVES - 4
CALORIES PER SERVING - 529
PREP TIME - 15 minutes
COOKING TIME - 45 minutes

Ingredients:
4 tbsp olive oil
2 medium onions, peeled and cut into thin wedges
1 yellow pepper, seeded and cut into thick slices
2 (100g/4oz) bacon chops, cut into strips
150g/5oz spicy sausages (such as kabanos), cut into thick slices
175g/6oz green lentils, rinsed
600ml/1pt hot pork stock
4tbsp tomato puree 4 tomatoes, cut into wedges
crusty bread to serve

1) Heat the oil in a large frying pan and cook the onions and pepper for 5-6 minutes until soft and golden. Remove from the pan using a slotted spoon and place in a large, deep pan. Add the bacon strips and spicy sausages to the frying pan juices and cook for 5 minutes until golden. Transfer to the deep pan.

2) Add the green lentils to the deep pan with the stock and tomato puree; stir to mix. Season well with freshly ground black pepper and bring to the boil, stirring occasionally.

3) Reduce the heat, cover and simmer for 30 minutes, stirring occasionally, until the lentils are cooked through, but not pulpy.

4) Add the tomato wedges and cook for a further 5 minutes.

Serve with crusty bread.
