THIS WEEK'S RECIPE:

HONEY AND MUSTARD ROASTED POUSSINS

SERVES - 2
CALORIES PER SERVING - 525

Ingredients:
30ml (2tblsp) vegetable oil
15ml (1tblsp) wholegrain or smooth mustard
10 ml (2tsp) lime juice
2 poussins, each weighing about 350g (12oz)
45ml (3tblsp) runny honey
Shredded spring onion and lime wedges to garnish

TO SERVE

1) Combine the oil, mustard and lime juice. Season

2) Rinse the poussins, pat dry then place in a deep dish. Pour over the mustard marinade, cover and leave to marinate for 1-2 hours at room temperature.

3) Place the poussins in a roasting tin and cook in a preheated oven at 190C, 375F, Gas Mark 5 for 30 minutes. Bruck with the honey and return to the oven for a further 20-25 minutes until they are cooked through and the skin is slightly charred in places.

4) Garnish with the spring onion and lime wedges.

5) Garnish with basil.
