HONEY AND MUSTARD ROASTED POUSSINS SERVES - 2 Ingredients: TO SERVE 1) Combine the oil, mustard and lime juice. Season 2) Rinse the poussins, pat dry then place in a deep dish. Pour over the mustard marinade, cover and leave to marinate for 1-2 hours at room temperature. 3) Place the poussins in a roasting tin and cook in a preheated oven at 190C, 375F, Gas Mark 5 for 30 minutes. Bruck with the honey and return to the oven for a further 20-25 minutes until they are cooked through and the skin is slightly charred in places. 4) Garnish with the spring onion and lime wedges. 5) Garnish with basil.
